Easy and Delicious Bierocks

 

On our homestead, we are always looking for great frozen meal ideas. When you work full-time, run a farm, run an online business and try to keep a social life, you need healthy go-to meals. Our usual is roasted, slow-cooked chicken, chicken and vegetable soup, chili, wild game stews, and steaks with a side salad and homemade sourdough bread. 

Thankfully one weekend, Brett's mom (Momma T) asked if we wanted to make some German  Bierocks. She said they were a great frozen meal to pop in the air fryer or oven when you need something quick and delicious. She was right. You will love this simple but delicious meal option if you need something to meal prep and have on hand.  

Cooking instructions

Step 1: Prepare Bread Dough

You can use any kind of bread dough you want (if you're in a hurry, store-bought frozen dough rolls work great). We tripled this simple bread recipe.

Step 2: Prepare Bierocks Filling

  • 2 TBS olive oil
  • 1 large onion chopped
  • 3 lbs of ground meat (pork, beef, turkey, wild game, etc.) Mamma T suggests 1 lb port sausage and 2 lbs of beef ground burger
  • 1 1/2 head of cabbage chopped
  • 1 TBS minced garlic
  • 2 tsp salt (______)
  • 1 1/2 tsp black pepper

Cook this down until the cabbage is soft. Drain the filling as best you can. Mamma T puts the filling in a casserole dish lined with paper towels to help soak up the rest of the moisture. 

Step 3: Roll out bread dough

Quarter your bread dough if you used the simple bread recipe above. Lightly dust your countertop with flour and roll out your dough to be a 1/4 inch thick and use a pizza cutter to make 4x4 inch squares. 

If you're using frozen dough rolls roll them out to make a 4x4 inch square like above.

Step 4: Fill and Fold Your Dough Squares

We used a 1/2 C of filling to make a nice-sized sandwich. After you scoop your filling onto the dough, take opposite corners and fold the dough together to enclose the filling completely. Flip your bierock over and place it on an ungreased cookie sheet. 

You can easily add a sprinkle of cheese (cheddar, mozzarella, or American) to your filling prior to folding in your bierock. 

Step 5: Bake and Butter (if desired) 

Bake your bierock at 350 degrees for 18-20 minutes or until golden brown. Once your bierocks are done, melt 1/2 C butter with 1 tsp garlic salt and brush over finished bierocks while still hot. 

Serve hot and enjoy! 

This dish is sure to bring your friends and family together over a delicious meal. We serve our bierocks with a side salad, broccoli cheddar soup, or any favorite vegetable side dish.
